Collagen-Boosting Healthy Oat Cookies Recipe

These chewy and delicious oat cookies are packed with collagen-boosting ingredients to support healthy skin, hair, and nails. They're made with whole grains, nuts, and seeds, providing a nutritious and satisfying snack. 

Ingredients: 

  • 1 cup rolled oats 
  • 1/2 cup almond flour 
  • 1/4 cup marine collagen peptide powder
  • 1/4 cup honey 
  • 1/4 cup coconut oil, melted 
  • 1/4 teaspoon vanilla extract 
  • 1/4 teaspoon salt 
  • 1/4 cup chopped walnuts 
  • 1/4 cup chia seeds 
  • 1/4 cup chocolate chips (optional) 

Instructions:

  1. Combine dry ingredients: In a large bowl, whisk together oats, almond flour, collagen peptides, salt, walnuts, chia seeds, and chocolate chips (if using). 
  2. Combine wet ingredients: In a separate bowl, whisk together honey and coconut oil. 
  3. Make dough: Gradually add wet ingredients to dry ingredients, stirring until just combined. Be careful not to overmix. 
  4. Bake cookies: Drop by rounded tablespoons onto a baking sheet lined with parchment paper. Bake in a preheated oven at 350°F (175°C) for 10-12 minutes, or until golden brown. 
  5. Cool: Let cookies cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely. 

Tips:

  • For a nut-free version, replace walnuts with sunflower seeds or pumpkin seeds 
  • To mix it up you can also add other ingredients to these cookies, such as dried fruit, spices, or maca powder.
